‘Brighten Me Up’ Breakfasts to Help You Through January

I think bringing colour to your breakfast can really make all the difference to kick starting your day in the best way possible. I believe we eat with our eyes, so by adding as much colour as possible to your breakfasts bowls it’s only going to satisfy your senses even further. Adding colour with different fruit and veg also generally means adding a whole variety of different nutritional elements to your breakfast table in the morning which is great.

Protein is key for energy too so by adding seeds and nuts as your toppings (twobirdscereals.uk - 2 tablespoons of their superseed mix contains as much protein as an egg!) you can get your protein kick as well as one or two of your five a day from your toppings.

Here’s just a few bright ideas to get you going in the mornings. Go as crazy and bright with the toppings as you dare and see if it makes a difference to your winter mornings:

Green Goddess Smoothie - Get your veg in too! If like me you’re not too keen on the taste of raw kale, a trick from the experts - adding mango to your kale smoothie means you won’t taste it as the sweetness seems to cancel out the tanginess of any kale taste.

1/2 Avocado

1/2 Mango

A good handful of Kale

A little squeeze of Honey or Maple Syrup

A splash of Coconut Water, Milk and Apple Juice

 

Blitz it up in a smoothie maker or blender until smooth. Mix in a handful of superseeds. My favourite being the bare mix from the lovely girls at twobirdscereals.uk 

 

Porridge Passion - There’s nothing like a warm bowl of porridge to start the day when it’s cold outside. I love trying to get as many different colours on to the top of my porridge in the morning to make a rainbow effect which genuinely just makes me smile even on the greyest days

For the Porridge:

Half cup of Jumbo Oats

200 ml Dairy Free Milk (I use Oat, Almond or Coconut Milk to make it silky smooth)

1 tsp Vanilla Bean Paste

Pop everything into a saucepan and place on a medium heat. Keep stirring occasionally until thick and creamy.

For the Toppings:

1 Passionfruit (Scoop out the delicious inside seeds of the fruits)

1 Kiwi Fruit

A handful or raspberries or blueberries

Two Birds Superseeds 

Almonds 

 

Banana + Berries Oaty Pancakes - An old favourite and one that makes for a perfect relaxing weekend breakfast. 

For the Pancakes:

1 Cup Jumbo Oats

1 Banana (the riper the better)

1 Egg

1 tsp Vanilla Bean Paste 

A little Coconut Oil for cooking

Blitz all the ingredients in a food processor. The mixture should be pretty thick but able to be poured so add a few more oats or a little coconut milk if required. Heat a little of the coconut oil in a frying pan. Once hot add a spoonful of mixture to the pan, cook a few mins on each side until cooked through and golden on each side. 

For the Toppings:

A splash of maple syrup

Coconut yogurt

Blueberries, figs, raspberries, strawberries, redcurrants, blackberries (the list is pretty much endless!)
